Easy Peanut Brittle

Crunchy Peanut Brittle - perfect!

Hardware:
1 Spatula (silicone works best.)
Measuring Spoons/Cup
2qt Saucepan
Medium/Large cookie Sheet

Note: I also recommend spraying all of the ‘hardware’ with cooking spray, just to make sure nothing sticks. Also, have everything measured and ready to go before you start boiling stuff, so you don’t have to leave your brittle unattended.

Ingredients:

  • 1 teaspoon butter or margarine
  • 1 1/2 teaspoons baking soda
  • 1 cup sugar
  • 1/2 cup water
  • 1/2 cup Karo light corn syrup
  • 1 1/2 cups peanuts (I used roasted & salted from a jar.)

Directions

  1. Mix and set aside the butter and baking soda.
  2. In a 2qt pan, mix and boil the sugar, water,and syrup to hardball stage (254 degrees F) or for about 15-20 minutes.
  3. Remove from heat (and turn to low) and add the butter/baking soda mixture.
  4. Place pan back on low heat, add peanuts and stir constantly until mixture turns yellow; about 3-5 minutes.
  5. Pour onto greased cookie sheet.
  6. Smooth into a thickness you like with the back of your spatula.
  7. Cool (for at least 30 minutes) and break into pieces.
  8. Enjoy!

And another great thing, this recipe is pretty versatile. You could use just about any nut and add in all sorts of other stuff for flavorings. Like what? Well, shredded coconut, red pepper flakes, maybe some cinnamon – just to name a few. You can even dip it in chocolate (after it’s cooled and broken up) for super decadence. Yum!
